Salt Cod Livorno Style

baccala' alla livornese

Ingredients x 4 people
600g salt cod
Flour as needed
Peeled tomatoes 500 gr.
Extra virgin olive oil
Salt
parsley
Garlic
Chilli

Cut the cod into pieces and flour it
In a pan, pour about 10 tablespoons of extra virgin olive oil and when hot put the pieces of cod and cook on both sides so that it forms a golden crust.
After about 15 minutes of cooking, remove the cod from the pan and in the same cooking oil (flavored with fish) put chopped parsley, garlic and chili .Then add the tomatoes, salt lightly and rollback moderate heat.Finally lose the pieces of cod and cook for another 15 minutes.Serve hot topped with chopped fresh parsley.
