Fried Rice of St. Joseph

Fried rice is a a traditional late medieval recipe and it’s spread throughout Tuscany .People are used to prepare this dish for the day of St. Joseph. They taste very good!

Ingredients x 6 persons

Rice 500 g Milk 1/4
l Water 1/ 4 l
3 eggs Rum
1 shot 110 g sugar
1 teaspoon baking powder for cakes
Grated lemon zest and orange q.b.
1 pinch of salt
2 tablespoons
flour Vanilla
1 stick Powdered
sugar
Oil for frying 1

Procedure:
Boil the rice in water and milk with the vanilla bean that you will have engraved for free seeds , for about twenty minutes, should remain soft . Eliminate the cue and let it cool. Transfer it into a bowl and incorporated the other ingredients, except the powdered sugar . Let rest for about an hour , and after working the dough with your hands getting into balls , fry them in hot oil. You will get the spherical croquettes , which are cooked when presenting a beautiful brown color . Drain on paper towels , let cool, then sprinkle with icing sugar and serve.
