Focaccia with grapes

Ingredients x 8 people:

1 kg black wine grapes
350 gr. flour
20 gr. of baker’s yeast
1 glass of water
8 tablespoons of white sugar
Extra virgin olive oil

Preparation
In a glass of water, dissolve the yeast . Prepare the flour on the work surface and knead it with the yest water, 4 tablespoons sugar, 4 tablespoons of olive oil and a pinch of salt.

Let the dough rise for about 1 hour, covered with a tea towel and away from temperature extremes. The mixture obtained must now be divided into two unequal parts, for the preparation of the bottom ( most abundant ) and the second layer (cover). Roll out the dough fairly thin and lay it on a baking sheet with aluminum top edge . It’s important that the dough overflows from the pan bottom . Fill the base of the cake with grapes washed and dried well (note: some of the grapes must be reserved for the second layer ).

Sprinkle over 2 tablespoons of sugar and 2 oil . Fold the edges of the sweet inwards and lie down over the second layer of dough . With the tips of the fingers create small dimples on the dough while still having care not to pierce. Sprinkle over the remaining grapes and 2 tablespoons of sugar and 2 of oil. Bake at 180 °C for about 1 h . Better tasted after a few hours, even better the next day.
