“Pappa al pomodoro”: one the most ancient and traditional dishes of Tuscany


Ingredients for 4 people:

stale bread: gr. 300
ripe or peeled tomatoes gr. 500
two cloves of garlic
one liter of broth
olive oil


In a large saucepan, saute garlic halved in enough oil.

Just mention to darken, add the chopped tomatoes, basil and a couple of chillies.

Add salt and cook for fifteen minutes.

Pour the hot broth and stands out when the boil add the bread cut into thin slices, which has been removed the crust.

Cook ten minutes, stirring often, careful it does not stick. Turn off the heat then letting it rest.

After about an hour stir well and heated for a while. 

Serve hot or warm with a little olive oil.
